Eating like an aristocrat
Last month I found myself in Yorkville quite by surprise so I insisted on a stop at Pusateri's for some treats. I tried kale chips for the first time. Me no likey. I don't understand what the big deal is about them. I do understand the big deal about cashews dipped in maple crunch then covered with chocolate. I didn't even get a taste of the salmon - but the cheese was amazingly yummy! If anyone has any tips on how to crack a quail egg please let me know - they are tough little things!

Low Carb, Gluten Free Pasta Bake
The vegetables being saute'd - this is an important step as it reduces the water and cooks the carrots. It takes quite a while so give yourself at least an hour to get from turning the stove on until you are putting the casserole into the oven.
Ingredients
1 whole spaghetti squash
2 tablespoons olive oil
1 red pepper, diced (I use at least two peppers, green and red)
1 zucchini, diced (I omitted this and it was just fine)
1 carrot, shredded (I just put a whole bag of shredded carrots in)
2 cloves garlic, minced (I use jarred garlic)
1 tomato, diced (I skipped this because they aren't in season right now)
16 ounces tomato sauce (I use a whole jar)
4 ounces shredded mozzarella cheese (whatever, I put most of the bag in)
1/4 cup shredded Parmesan
I obviously saw this recipe as a skeleton and incomplete!
Directions
- Preheat oven to 350 degrees.
- Poke spaghetti squash all over with a knife and place the poked squash on a baking pan and bake at 375 degrees for 45 to 60 minutes. While that's cooking, add the oil, garlic, pepper, zucchini, and carrots to a pan, cooking over medium heat.
- Cut the squash in half, scoop out the seeds, and with a fork, scrape the flesh from the peel. It should flake off easily in strings, resembling spaghetti. Place the spaghetti squash flesh in a casserole dish. Add the cooked veggies, diced tomato, sauce, and most of the cheese and mix well. Sprinkle leftover cheese on top and bake for 30 minutes or until the cheese is bubbly.
- Allow to cool for five minutes, serve, and enjoy!
The recipe says 30 minutes - but I like mine extra cheesy and extra crispy so I put it in for more like 50 minutes. I would say it easily serves 10 as a side dish but I eat it on it's own with a little bit of extra cheese on it. 2 minutes in the microwave and I have a great lunch that wont tack itself directly to my hips or backside.

New Year, New Food - Grain Free Raspberry Chocolate Muffins
As we do when a new year is upon us, I went in search of some healthy recipes to take me through the winter months. I stumbled upon Detoxinista and have been eating well ever since. The website is run by a holistic nutritionist and is organized by category. It's very easy to find yummy, healthy recipes that cater to those of us who have tummy issues, food sensitivities and who also just like to eat quality meals that aren't full of preservatives and all that nasty stuff we should be avoiding as much as possible. No one with a bad diet was ever accused of being 10 years younger than they actually are. Isn't that motivation enough?

Normally I could live on cheese, vegetables, chocolate and coffee...but with the Danish Exchange Student living with us now, I am forced to actually come up with, and provide proper meals. Fortunately she likes cooking and is always asking what she can do to help - I might just survive this experience! We tried the avocado chocolate pudding - it was phenomenal and really tastes like the best chocolate pudding ever. I don't like avocados but I couldn't even taste them in this. The site also includes recipes for cauliflower pizza crust, spaghetti squash 'pasta' casserole, and vegan/gluten free mac & cheese. There is something for everyone, gluten free, celiac, paleo, low carb and how about...simply hungry!

I found these yummy looking muffins and decided to give them a try...

These came together quickly and I had them in the oven in under 5 minutes. The mixture seemed very thick, much thicker than it looks on the Detoxinista website, but they taste good and held up well. We will be keeping these in the food rotation with some variations from time to time. Bananas and peanut butter perhaps?

Raspberry Chocolate Chip Muffins (Grain-free)
- 2 cups almond flour (store-bought or homemade)
- 2 whole eggs
- ¼ cup coconut oil, softened (butter works, too)
- ¼ cup honey
- 1 tablespoon vanilla extract
- 1 teaspoon apple cider vinegar
- ½ teaspoon baking soda
- ¼ teaspoon sea salt
- 1 cup fresh raspberries (or thawed from frozen)
- ½ cup chocolate chips
- 12 muffin liners
Instructions
- Preheat oven to 350F and line a muffin tin with 12 paper liners.
- Combine all the ingredients– except for the raspberries and chocolate chips– and mix well, until the batter is a uniform consistency.
- Gently fold in the raspberries and chocolate chips, until they are spread throughout the batter.
- Using a ¼ cup to measure, drop batter into muffin liners and bake for 15 minutes at 350F, turning the pan halfway through for even baking. The final muffins should be golden brown around the edges and firm in the center.
- Allow to cool in the pan for 15 minutes, then remove to cool completely.

Scotland in photos!
So, I pulled the trigger and booked my ticket to Scotland. I was quite nervous as I hadn't been away from the Little Prince since he was born and always in the back of my mind was, 'What if something happens to me?'. Let's be honest, something could happen anytime, anywhere but flying makes me nervous so I was a little ball of stress leading up to my trip! I did the responsible thing and saw my lawyer to do my will and get all of my documents, bank accounts and passwords in order. I felt much better but still am not a fan of flying! I sobbed in the airport while saying goodbye to my sweet, precious little boy and got on the plane with tears streaming down my face. Sounds glamourous doesn't it!?
My point? I used to be a jetsetter...I flew all around the world and never gave it a second thought. I would fly to London for the weekend, Florida on a whim, Montreal for bagels...and it never once bothered me. Having a child has made me very, very aware of my own mortality. Fortunately the guy next to me on the plane was drunk and Scottish and didn't shut up the entire time so he took my mind off things. We had a good chuckle at the Canadian guy wearing a kilt on the plane *rolling eyes* the only time that's acceptable is when a man has been at a wedding, woke up still in his kilt and has had to race to the airport to get his flight home.
Our flight left the gate on time and all was looking good until we got out to the runway and we waited and waiting...finally the pilot came on and told us we need to go back to the gate because there was a technical problem and he needed to do some paperwork. Charming. Oh and the fuel we burnt off going to the runway and back had to be topped up so we left Toronto an hour late...and I had no way of telling my uncle at the other end because it was 2:30am for him!
You know in every group of strangers, on every flight, every bus, in every restaurant...there's that one guy who can't just go with the flow and has to make a spectacle of himself? Yeah, he made himself known quite early in the flight by marching to the back of the plane where the flight attendants were busy working on drinks to calm down irritated passengers. I had prebooked my seat so I had the very last spot at the back of the plane (right next to the washrooms and emergency exit) so I was able to watch this guy make his way from the front of the plane to the galley and I'm going to be honest...he spent wayyyy to much time back there. I was going to ask if he is an air marshal but I heard him asking the flight attendants if they were going to tell him why we were delayed. They told him they know nothing and to go back to his seat but he refused to budge. I even had to tell him to move so I could get to the washroom and he wasn't happy about it! This went on for most of the flight and just before we landed I heard the head flight attendant speaking to a couple of people a few rows ahead of me about him, letting them know they could file a complaint with the airline. Hm. Well this is interesting!
The flight landed and of course everyone jumps up the second the seatbelt light goes off (except for me, I wait until everyone is off the plane then disembark. My luggage will be waiting for me) and they end up standing there for about 10 minutes before the pilot comes on and says everyone needs to sit back down. Hm, this is new! Next thing the annoying guy marches to the back of the plane followed by 3 big bad Strathclyde police officers! Oh yeah, someone wasn't happy! It seems the head flight attendant had decided being verbally assaulted, sworn at, called names and being subjected to sexually demeaning comments from a passenger just wasn't a part of her job description. From what other passengers said, a good amount of this went on at the front of the plane (I should've been an investigative reporter) so I didn't witness it but I did see how much time this guy was spending at the galley annoying the flight attendants and I told the police I felt it was bordering on harassment. Oh...I told the 5th police officer that...seems three wasn't enough so two more got on the plane. Finally they let us off the plane to get through immigration, which took forever (I should look into getting a UK passport), and get on our way. My poor uncle was standing in the airport for almost 2 hours waiting for me!
Now, I don't know if my Scottish experience is the most accurate for anyone travelling there as I tend to be kept in a little ball of cotton wool and never have to deal with reality while I'm there as I am fortunate to have great family in Scotland who never let me out of their sight or pay for anything. I do have lots of photos to share of my adventures so today I am starting with my random photos....

The view from the gate - the house across the street was once owned by an old woman who employed my great-uncle. Legend is it was a bit of a Lady Chatterley situation and I remember her as being so very nice and I played in that house as a child. There are secret doors and staircases! It's now owned by one of the directors of Glasgow Celtic who is pals with my uncle but I didn't meet him when I was there.
The guard dog slash big softie. We were watching Britain's Got Talent when I was there and every time Pudsy came on to do his dance the guard dog got in a huff and left the room! I'm shocked the opera singers didn't win!

I love this fuzzy photo taken in the pub in Cambusbarron! Everyone drinks Irn Bru - young, old and everyone in between! This same evening I got my photo taken with Kevin Drinkel who used to play for Glasgow Rangers (that's more like it!).

Something I love about traveling is trying new foods or new combinations of foods. I made my uncle sit and wait while I took photos of his lunch. This is bacon, brie and cranberry! The Suburban Prince will be having this for lunch soon enough.
I didn't have haggis when I was in Scotland but I've certainly eaten it enough times in my life. Before you turn your nose up at it you should find the ingredient list on a package of sausages. I actually prefer the tinned haggis tho and always have it in the pantry.
Cousin Willie's wife ordered me one of these. Somewhere under all the cream and marshmallows there was a splash of hot chocolate! Note the Flake stuck in the top! YUM!
I had a snowball for lunch. I skipped the savory portion of the midday repast and went right to dessert. Snowballs are a bit hard to describe...the middle is marshmallowy but not like a north American marshmallow. They are sweet and taste like my childhood...the next time you are in a British shop try one!
Cousin Willie and his wife picked me up and took me to see the Falkirk Wheel. It's an amazing piece of engineering and it's very cool to watch. It's used to get boats from the bottom part to the top part just like a lift lock. You can watch a video of it here.
While out with Cousin Willie and his wife we went for a drive to the Forth bridge. The wind and rain were out of control and we got out of the car to take a few photos...at one point I thought Cousin Willie's wife was going to be blown away!

Christmas Breakfast
This year we are staying at home for Christmas. No running around. No leaving presents unopened under the tree so we can make other people happy with our presence...no insanity.
My inlaws decided (in a huff) to go to Nova Scotia for Christmas so I invited my parents to come for Christmas. The downside of marriage...complicated relationships. Nothing will ever be the same as when you were growing up and that's not always easy. So, this year, we will be hosting breakfast and as we know, these sorts of things take planning. I sat down the other day and wrote a wee list of what I would like to serve...foods that are simple and easy to make!
Christmas coffee! I am the only one in the family who doesn't drink coffee but I know the rest of the addicts wont be able to function without it!
It's not Christmas until I have stuffed myself with chocolate while opening pressies!
I tested these the other day and the Suburban Princes loved them so they are a go! Put ham slices in a muffin tin or ramekin, crack eggs into them, season and bake! Easy peasey, lemon squeezey!
Panettone! Everyone loves this toasted with butter melting on it. Pure bliss! Slice it across and put on baking trays to toast in the oven.

Charity Tea Recap & Photos!
Last weekend I attended a charity tea at High Heeled Life's house. It was called the Serendipity Christmas Tea and we were all asked to bring an unwrapped gift for a teen girl which would be donated to the local charity collecting for Christmas.
We were greeted at the door with a glass of champers. You can see it ready and waiting on the table. I've decided I need to be handed a glass the moment I walk into any building.

Some great items were collected for the teen girls who need some love at Christmas.
Every surface was beautifully decorated - I know the pain of living with a renovation!
Sometimes we just work with what we have!
Prepare to gain 10lbs just looking at the food - I lost track of how many treats I ate!
Everything was beautifully made and presented!
Never be afraid to ask if something you are deathly allergic to is in something you are being served. Better safe than sorry! I was told tho, these were amazing!

I sat at one of the couches to eat all of the yummy treats. My favourite was the egg salad sandwiches - apparently they contained some highly guarded, secret Italian ingredient.

Thanks for inviting me to your charity tea HHL! I had a great time with the girls!
After we ate everyone gathered around the big couches and like fun loving women who are no threat to each other we laughed and screeched and cackled and had a great time! Now we know one of the girls has her family's meals all cooked by her MIL, her husband gets the kids to school and does the ironing and the children sort the laundry. She gets to read books and take baths (oh and work full time). We are all a little jelly bean!
At the peak of hilarity there was a tentative knock at the door - the room went silent and one of the husbands was let in....looking terrified! We sat there looking mostly prim and proper until we forgot he was standing there before we went back to conversations about why men cheat, how to make children say please, religion in the 1st and 3rd worlds and anything else we could come up with!
I was exhausted by the time I got home! It was a great day for a great cause!
