Since we have been spending so much time at home for the last couple of months I have had the chance to try out some meals I have had on my list. Last week I made a nice curried chicken that got some help from a jar of sauce.
I started with a little olive oil and seared the chicken and sprinkled curry powder on it to make it extra currylicious.
You dont have to cook the chicken all the way through, just sear the outside and then it can be sliced easily. I deglazed the pan with some cheap red wine I had...ok let's call a spade a spade, it was a bottle of Arbor Mist winterberry merlot. It was open and on hand. Anyhooooo I deglazed the pan and put the sliced chicken back in to finish cooking....
Meanwhile I added a jar of curry sauce and chopped up cauliflower and let it cook until I was ready to serve dinner. We also had Indian rice with lots of peas and roasted veggies.
This was such an easy meal that took just a little bit of planning ahead!
