Chocolate Peppermint Meringues!

These are my favourite Christmas treat - my mom makes them which says a lot as she isnt much of a cook or baker but I just cant get enough of these!

I have two recipes to share with you and I cant wait to hear what you think of them!


· 3 egg whites
· 3/4 cup white sugar
· 1/2 teaspoon distilled white vinegar
· 1/2 teaspoon vanilla extract
· 1 pinch salt
· 1 cups semisweet chocolate chips
· 2 crushed candy canes
Preheat oven to 300 degrees F (150 degrees C).

Grease baking sheets or line them with parchment paper.

1. In a medium bowl, whip egg whites to soft peaks. Gradually add the sugar, vinegar and vanilla while whipping to stiff peaks. Fold in chocolate chips & candy cane. Drop by spoonfuls onto the prepared cookie sheets.

2. Bake for 20 to 25 minutes in the preheated oven, until cookies are dry.




The overnight version....

3/4 cup chocolate chips
1/4 cup crushed candy cane pieces
3 egg whites
1/8 teaspoon salt
2/3 cup sugar
1 teaspoon cider vinegar

Preheat oven to 300°F.




Beat egg whites and salt until soft peaks form.
Slowly add the sugar to the egg whites. Continue to whip the eggs and sugar for a few minutes. Then add the vinegar to the bowl and whip the egg whites until glossy, with stiff peaks forming when the beater is lifted.
Using a rubber spatula, gently fold in chocolate chips and crushed candy cane. 



Drop by teaspoons onto a cookie sheets lined with parchment or Silpat.
Shape with your fingers if desired.

Put cookie sheets in the 300°F oven, close the door and turn the oven OFF.


Leave them in the oven overnight. 




I cant even begin to describe how heavenly these are! The perfect Christmas treat! And I dont even like sugary sweets!
