Roasted Beets - Recipe
One of my favourite things to eat all year is roasted beets! We plant lots of them every spring to enjoy at the end of summer. They are so perfectly earthy and crisp...topped with walnuts and feta they are practically candy!
Peel and slice beets and lightly toss in olive oil, salt and pepper.
Bake at 400 for 40 minutes, toss and bake for another 20 minutes.
When they are cooked plate them and top with walnuts and feta.
Enjoy!

I love beets.
I planted beets in my garden this year ~ I love them! I'll be making this once my crop comes in.
I'm sharing my new favorite {thanks to you} gelato recipe today. I've made it twice this summer. Do you think if I eat it while on the treadmill I won't gain any weight? :)

I adore beets! What a great recipe--perfect for letting the beets take center stage. Wow, I feel like I just commented on an iron chef competition. ;) I may make these tonight.
While I like beets, my husband can't even stand the scent of them....I will have to make these on an overtime shift. They look so healthy and tasty!
We planted yellow and red beets this spring.
When we harvest them I will definitely try this recipe.

I love beets and eat them regularly. There's nothing quite like a roasted beet!
We've been enjoying them with a vinaigrette dressing, fresh green beans and boursin cheese...delish!

I must admit - I only eat pickled beets .. but , I think I need to try this. So simple and summery!
